Cheesemaking process

My journey in cheesemaking began with a deep appreciation for traditional French techniques. I traveled to France to train at various traditional cheesemaking farms, immersing myself in centuries-old methods and learning the artistry that transforms simple ingredients into exceptional cheeses.

After returning to Canada, I brought this knowledge to Blue Harbour Cheese, where I worked to produce a number of commercially successful cheeses. This experience taught me how to balance traditional techniques with the demands of modern production, creating cheeses that honor heritage while meeting contemporary standards.

Today, I work with Annapolis Fine Cheese in Wolfville, Nova Scotia, where we continue to create award-winning cheeses. Our recent achievements include 1st place for Truffle Fresh Cheese and 2nd place for Herb & Garlic Fresh Cheese in the flavoured fresh category at the 2025 National Cheese Competition in Toronto, and being named 2024 Producer of the Year by Taste of Nova Scotia.

I specialize in traditional cheesemaking techniques, bringing French artistry to Canadian cheese production, always with a focus on quality, flavor, and the craftsmanship that makes each cheese unique.
